It's all in the technique!

Since visiting several barbecue and soul food spots in the north St. Louis area, I've discovered that the folks preparing the food possess meticulous technical skills. It's all in the technique. Whether it's a brisket sandwich at Roper's Ribs or a smothered pork steak at Sweetie Pie's at 9841 West Florissant Avenue, once you take your first bite, you realize just how much technique, care, and expertise is involved in the preparation of these delicious dishes.

Roper's Ribs

If you've ever wanted to know what a barbecued pulled pork sandwich should taste like, then you ought to stop by Roper's Ribs, at 6929 Jennings Sta. Rd. and West Florissant Ave. This was the first stop on my tour of barbecue and soul food spots in St. Louis, MO. I've lived in this neighborhood all my life, and I'm ashamed of myself for never having gone into this place.
