It's all in the technique!

Since visiting several barbecue and soul food spots in the north St. Louis area, I've discovered that the folks preparing the food possess meticulous technical skills. It's all in the technique. Whether it's a brisket sandwich at Roper's Ribs or a smothered pork steak at Sweetie Pie's at 9841 West Florissant Avenue, once you take your first bite, you realize just how much technique, care, and expertise is involved in the preparation of these delicious dishes.

  1. I think you are right. I am from the South and have eaten this type of food my entire life. But would I be able to prepare it for myself? Probably not! I can't wait to hear more about your food adventures. And I just might find myself making the trek to North St. Louis to try these places out.
